Homemade Gnocchi

Welcome back to my blog. I know it’s been a hot minute since I’ve posted here… as we all know a lot has happened in the last few months, but let’s leave that aside and get right to it.
My all time favorite food is Gnocchi and to be honest I always thought it would be a mission to execute, until…. my mom shared a recipe from a friend and she promised it was not only delish but super easy to make! Considering I had some spare time during quarantine, I decided to try my hand at making it.
Can I just say, it was restaurant level delish! My husband is not a gnocchi fan and he even went back for seconds, even Nicolas loved it.
Homemade Gnocchi (Serves 4)
Ingredients:
5 pink potatoes
1 egg yolk
1 tbsp of butter
2 cups (more or less) of flour
1 tbsp olive oil
Salt to preference
Instructions:
In a large pan, bring water to boil and add a bit of salt and olive oil. Peel and cut up potatoes, cook until soft, remove the potatoes but save the water. Allow potatoes to cool in a separate dish and mash the potatoes thoroughly, making sure not to leave any chunks.
Add in egg yolk and butter and mix the ingredients together using a fork. Slowly add flour until dough forms, the consistency should be firm but still malleable. If you feel you need to add more flour do so. I recommend tasting the dough as you go and adding any more salt as needed.
Take the gnocchi dough and place it in a large sized ziploc bag, cut the corner and squeeze and cut the pieces of dough right into the same boiling water you used for the potatoes. Once the gnocchi starts to float to the top use a drainning spoon to scoop them from the top and start placing them into your serving dish.
Once you cooked all the gnocchi add your favorite sauce and Voila!
I chose to top it with Vodka Sauce (find recipe here), it will also pair really well with meat sauce. So get creative!
